I'm not sure if you mean from step one, or if you're asking about having more than one custom mood theme, so I'll post the link to the basic instructions, too.
This page has a link to the specific mood theme instructions and the admin console. I printed them off and keep them by the computer so I can reference them without flipping back and forth.
I swear to God, LiveJournal hates me and will never, ever, EVER let me change my moodtheme. I got a damn Photobucket account, I've changed the mood theme ID, I've changed the URL throughout to link to the account I made to host the images, and it absolutely will not load the pictures. Every time I try, I get an "action failed" error, and I have no idea why. Stupid rassin' frassin' LJ!!!

As for having more than one, this page

has a link to the mood theme editor, where it shows any custom mood themes you've uploaded, and you can edit or delete them there, too.
